Orange Salmon Grill (Serves Six)

Fillets:
6 salmon fillets (6 oz. Each)
salt and pepper (to taste)
1 T fennel seeds (crushed)

Glaze: |
|
1/3 C honey
1/2 C orange juice
1 T orange zest
2 T red wine vinegar
|
2 garlic cloves (crushed)
2 T olive oil
1/4 t salt
|
1/4 t cayenne pepper
11 1/2 T lemon juice
1 T mustard
|
|
Heat broiler or grill. Arrange salmon on plate and sprinkle with salt, pepper, and fennel. Bring glaze ingredients to a boil in a small saucepan and simmer for 7 minutes. Baste/cook salmon 4-5 minutes with 1/2 of the glaze. Reserve half for condiment.
